My favourite method for a simply stirfry, is a little differant with the golds.
They are very delicate and to cook them med-low for a longer time results in a butter soft texture. I like my Golds to keep their form and colour whenever possible.
The trick is to get your frying pan ready with a little oil and very hot.
Add your mushrooms and toss them every minute or two. This will allow them to get crisp and the interior cooks just enough for a satisfying texture. This method also keeps the beautiful yellow caps vibrant on the plate.
Keep refrigerated in paper bag for up to 7 days.
